- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Add the orange zest and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the gluten-free flour, salt, and baking powder.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
- Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
- Flatten each ball slightly with the bottom of a glass.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
