Delicious and zesty gluten-free shortbread cookies perfect for spring.

Ingredients

  • 1 cup gluten-free all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Add the orange zest and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the gluten-free flour, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  6. Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
  7. Flatten each ball slightly with the bottom of a glass.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
