  • 1/2 cup maple syrup
  • 1/4 cup unsweetened apple sauce
  • 1/3 cup melted coconut oil (or melted butter)
  • 2 large eggs (at room temperature)
  • 1 teaspoon vanilla extract
  • 2 cups gluten-free all-purpose flour
  • 1 cup almond flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 apple (cored and very thinly sliced)
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon melted butter (or melted coconut oil)

Instructions

  1. Preheat oven to 350°F and prepare a 9×9-inch cake pan by lining and lightly greasing it.
  2. In a large bowl, whisk together the almond milk, maple syrup, apple sauce, melted coconut oil, eggs, and vanilla extract.
  3. Add the gluten-free all-purpose flour, almond flour, baking powder, baking soda, and cinnamon to the wet ingredients, gently mixing until just combined.
  4. Fold in the thinly sliced apples until evenly distributed, then transfer the batter to the prepared cake pan.
  5. In a small bowl, mix the sugar and cinnamon toppings, then sprinkle them evenly over the batter.
  6. Bake for 30 minutes or until a toothpick comes out clean when inserted in the center. Cool on a wire rack before serving.
  7. Optionally, sprinkle with powdered sugar or drizzle with icing before serving.
