A quick and easy recipe for a delicious gluten-free cinnamon roll made in a mug, perfect for satisfying sweet cravings.

  • 2 tbsp almond milk (plus more, if needed)
  • 1 tbsp maple syrup
  • 1 tsp coconut oil
  • Pinch of sea salt
  • 2 tsp coconut sugar
  • 1/4 tsp cinnamon
  • 2 tbsp powdered sugar
  • 1 tsp almond milk (for glaze)

Instructions

  1. In a greased shallow mug or ramekin, combine all ingredients for cinnamon roll and whisk together with a fork. If the batter is too thick, splash in some more almond milk until it resembles a thick pancake batter.
  2. In a separate bowl, make cinnamon sugar by mixing coconut sugar and cinnamon together.
  3. Sprinkle the cinnamon sugar evenly over the prepared batter.
  4. Using a knife or a chopstick, swirl the cinnamon sugar into the batter in a circular motion until evenly incorporated.
  5. Microwave for 1 minute to 1 minute 20 seconds, depending on the power of your microwave.
  6. Combine ingredients for the sugar glaze until smooth. Drizzle over the cinnamon roll.
