- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened cream cheese and butter until smooth.
- Add in the sugar, egg, and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the gluten-free flour, baking powder, and cinnamon.
- Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
- In a small bowl, mix the brown sugar and cinnamon for the filling.
- Roll the dough into small balls and flatten them slightly.
- Sprinkle the cinnamon filling on top of each cookie and fold the edges over to seal.
- Place the cookies on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until golden brown.
