- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the gluten-free flour, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Chill the dough in the refrigerator for about 30 minutes.
- Once chilled, scoop out tablespoon-sized portions of dough and roll them into balls.
- Roll each ball in powdered sugar to coat.
- Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are set and the tops are crinkled.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
