  • 1 cup gluten-free graham cracker crumbs
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1/2 cup peanut butter
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix gluten-free graham cracker crumbs, cocoa powder, and melted butter until combined.
  3. Press the mixture into the bottom of a greased 9×9 inch baking pan.
  4. In another bowl, beat the cream cheese, peanut butter, powdered sugar, and vanilla extract until smooth.
  5. Spread the cream cheese mixture over the crust in the baking pan.
  6. Sprinkle chocolate chips on top of the cheesecake layer.
  7. Bake for 25-30 minutes or until set.
  8. Allow to cool, then refrigerate for at least 2 hours before cutting into bars.
