  • 1/2 cup unsalted butter, melted
  • 1 cup dark chocolate, chopped
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/4 cup cocoa powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the crushed gluten-free cookies with melted butter and press into the bottom of a springform pan.
  3. Melt the dark chocolate in a double boiler or microwave, then let it cool slightly.
  4. In a separate bowl, whisk the eggs and sugar until light and fluffy.
  5. Add the melted chocolate and vanilla extract to the egg mixture and mix well.
  6. In another bowl, whip the heavy cream until soft peaks form, then fold it into the chocolate mixture.
  7. Pour the mousse over the cookie crust and smooth the top.
  8. Chill in the refrigerator for at least 4 hours or until set.
  9. Before serving, dust with cocoa powder and garnish as desired.
