A rich and decadent chocolate mousse cake that is completely gluten-free, perfect for chocolate lovers.

Ingredients

  • 1 cup dark chocolate chips
  • 4 large eggs, separated
  • 1/4 cup granulated sugar
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Melt the dark chocolate chips in a double boiler or microwave until smooth.
  2. In a bowl, whisk the egg yolks and sugar until pale and creamy.
  3. Fold the melted chocolate into the egg yolk mixture.
  4. In another bowl, beat the egg whites with a pinch of salt until stiff peaks form.
  5. Gently fold the egg whites into the chocolate mixture.
  6. In a separate bowl, whip the heavy cream with vanilla extract until soft peaks form.
  7. Fold the whipped cream into the chocolate mixture until fully combined.
  8. Pour the mousse into a cake pan and refrigerate for at least 4 hours or until set.
  9. Serve chilled, optionally topped with additional whipped cream or chocolate shavings.
