  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1/4 cup almond milk (or any dairy-free milk)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the gluten free flour, cocoa powder, baking powder, and salt.
  3. In another bowl, mix the sugar, vegetable oil, almond milk, eggs, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a thick dough forms.
  5. Chill the dough in the refrigerator for about 30 minutes.
  6. Once chilled, scoop tablespoon-sized portions of dough and roll them into balls.
  7. Roll each ball in powdered sugar until fully coated.
  8. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are set and the tops are crinkled.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

  • For a richer chocolate flavor, use dark cocoa powder.
  • Store cookies in an airtight container for up to a week.
