A rich and creamy chocolate cheesecake that is gluten-free, perfect for dessert lovers.

  • 2 cups gluten-free chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine the gluten-free chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar and vanilla extract, mixing until well combined.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the sour cream and melted chocolate chips until fully incorporated.
  6. Pour the cheesecake batter over the crust in the springform pan.
  7. Bake for 55-60 minutes or until the center is set but still slightly jiggly.
  8. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  9. Refrigerate for at least 4 hours or overnight before serving.

Notes

  • For a richer flavor, use dark chocolate chips.
  • Make sure all ingredients are at room temperature before mixing.
  • Top with whipped cream or chocolate ganache for extra indulgence.
