A refreshing and zesty salad made with black beans, lime, and chili, perfect for a healthy lunch or side dish.

Ingredients

  • 1 can black beans, rinsed and drained
  • 1 cup corn, fresh or frozen
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • Juice of 2 limes
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the black beans, corn, red bell pepper, red onion, and cilantro.
  2. In a separate small bowl, whisk together the olive oil, lime juice, chili powder, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Let the salad sit for at least 15 minutes to allow the flavors to meld.
  5. Serve chilled or at room temperature.
