Delicious and satisfying enchiladas made with tender chicken thighs, perfect for a gluten-free diet.

  • 2 lbs chicken thighs
  • 1 cup enchilada sauce
  • 8 gluten-free tortillas
  • 1 cup shredded cheese
  • 1/2 cup diced onions
  • 1/2 cup chopped cilantro
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the chicken thighs until fully cooked, then shred them.
  3. Add the enchilada sauce, cumin, garlic powder, salt, and pepper to the shredded chicken and mix well.
  4. In a separate bowl, combine the diced onions and chopped cilantro.
  5. Take a gluten-free tortilla, fill it with the chicken mixture, and sprinkle some cheese on top.
  6. Roll the tortilla and place it seam-side down in a baking dish.
  7. Repeat with the remaining tortillas and chicken mixture.
  8. Pour any remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  9. Bake in the preheated oven for 20-25 minutes until the cheese is bubbly and golden.
  10. Garnish with the onion and cilantro mixture before serving.

  • Ensure all ingredients are certified gluten-free.
  • Can substitute chicken thighs with chicken breast if preferred.
  • Adjust the spice level by adding jalapeños or hot sauce.
