- 2 lbs chicken thighs
- 1 cup enchilada sauce
- 8 gluten-free tortillas
- 1 cup shredded cheese
- 1/2 cup diced onions
- 1/2 cup chopped cilantro
- 1 tsp cumin
- 1 tsp garlic powder
- Salt and pepper to taste
- Preheat the oven to 375°F (190°C).
- In a skillet, cook the chicken thighs until fully cooked, then shred them.
- Add the enchilada sauce, cumin, garlic powder, salt, and pepper to the shredded chicken and mix well.
- In a separate bowl, combine the diced onions and chopped cilantro.
- Take a gluten-free tortilla, fill it with the chicken mixture, and sprinkle some cheese on top.
- Roll the tortilla and place it seam-side down in a baking dish.
- Repeat with the remaining tortillas and chicken mixture.
- Pour any remaining enchilada sauce over the top and sprinkle with the remaining cheese.
- Bake in the preheated oven for 20-25 minutes until the cheese is bubbly and golden.
- Garnish with the onion and cilantro mixture before serving.
