A delicious and comforting dish featuring tender chicken served over creamy mashed potatoes, all gluten-free.

Ingredients

  • 2 cups cooked chicken, shredded
  • 4 large potatoes, peeled and cubed
  • 1/2 cup milk (or dairy-free alternative)
  • 4 tablespoons butter (or dairy-free alternative)
  • Salt and pepper to taste
  • 1 cup chicken broth (gluten-free)
  • 1/2 cup green onions, chopped (optional)

Instructions

  1. Boil the potatoes in salted water until tender, about 15-20 minutes.
  2. Drain the potatoes and return them to the pot.
  3. Add milk, butter, salt, and pepper to the potatoes and mash until smooth.
  4. In a separate pan, heat the chicken broth and add the shredded chicken to warm it through.
  5. To serve, place a generous scoop of mashed potatoes in a bowl, top with the warm chicken, and drizzle with additional broth if desired.
  6. Garnish with chopped green onions if using.
