  • 1 tablespoon baking powder

  • 1/4 cup unsalted butter, melted
  • 1 cup milk (or dairy-free alternative)
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the chicken broth over medium heat.
  2. Add the diced carrots, celery, onion, garlic powder, thyme, salt, and pepper. Cook until the vegetables are tender.
  3. Stir in the shredded chicken and bring the mixture to a simmer.
  4. In a separate bowl, combine the gluten-free flour, baking powder, and salt.
  5. Add the melted butter and milk to the dry ingredients, mixing until just combined.
  6. Drop spoonfuls of the dumpling batter into the simmering broth.
  7. Cover the pot and let the dumplings cook for about 15 minutes, or until they are fluffy and cooked through.
