A comforting and easy-to-make gluten-free casserole featuring chicken, broccoli, and rice, perfect for a spring dinner.

Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups broccoli florets
  • 1 cup uncooked brown rice
  • 3 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup cream of chicken soup (gluten-free)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, broccoli, uncooked rice, chicken broth, cream of chicken soup, garlic powder, onion powder, salt, and pepper.
  3. Mix well until all ingredients are evenly combined.
  4. Transfer the mixture to a greased 9×13 inch baking dish.
  5. Cover with aluminum foil and bake for 45 minutes.
  6. Remove the foil, sprinkle the shredded cheddar cheese on top, and bake for an additional 15 minutes or until the cheese is melted and bubbly.
  7. Let it cool for a few minutes before serving.
