A comforting and easy-to-make gluten-free casserole that combines cheesy goodness with chicken and rice, perfect for a family dinner.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup uncooked gluten-free rice
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup broccoli florets
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, uncooked rice, chicken broth, half of the cheddar cheese, broccoli, onion, bell pepper, garlic powder, onion powder, salt, and pepper.
  3. Transfer the mixture to a greased baking dish.
  4. Cover the dish with aluminum foil and bake for 30 minutes.
  5. Remove the foil, stir the casserole, and top with the remaining cheddar cheese.
  6. Bake uncovered for an additional 15-20 minutes, or until the cheese is bubbly and golden.
  7. Let it cool for a few minutes before serving.
