A refreshing and creamy gluten-free celery salad perfect as a side dish.

Ingredients

  • 4 cups celery, chopped
  • 1 cup mayonnaise
  • 1/2 cup Greek yogurt
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chopped celery, red onion, and parsley.
  2. In a separate bowl, mix together the mayonnaise, Greek yogurt, lemon juice, salt, and pepper until smooth.
  3. Pour the dressing over the celery mixture and toss until well coated.
  4. Chill in the refrigerator for at least 30 minutes before serving.
  5. Serve as a side dish or a light lunch.
