A delicious and easy-to-make gluten-free taco pie perfect for spring dinners.

Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups gluten-free tortilla chips, crushed
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a cast iron skillet, brown the ground beef over medium heat until fully cooked.
  3. Add the black beans, corn, taco seasoning, and salsa to the skillet. Stir to combine and heat through.
  4. Remove the skillet from heat and layer the crushed tortilla chips on top of the beef mixture.
  5. Sprinkle the shredded cheese evenly over the tortilla chips.
  6. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and garnish with green onions and cilantro before serving.
