A refreshing and healthy salad perfect for spring, combining carrots and raisins with a creamy dressing.

Ingredients

  • 4 cups grated carrots
  • 1 cup raisins
  • 1/2 cup Greek yogurt
  • 1/4 cup honey
  • 1 tablespoon lemon juice
  • 1/4 teaspoon cinnamon
  • Salt to taste

Instructions

  1. In a large bowl, combine the grated carrots and raisins.
  2. In a separate bowl, mix together the Greek yogurt, honey, lemon juice, cinnamon, and salt until smooth.
  3. Pour the dressing over the carrot and raisin mixture and toss to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving.
