Delicious and fluffy gluten-free cinnamon rolls infused with the flavors of carrot cake.

Ingredients

  • 2 cups gluten-free all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 1 cup milk (dairy or non-dairy)
  • 1 large egg
  • 1 cup grated carrots
  • 1/2 cup raisins (optional)
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the gluten-free flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together the melted butter, milk, and egg.
  4. Combine the wet and dry ingredients, then fold in the grated carrots, raisins, and walnuts.
  5. Roll the dough out on a floured surface into a rectangle.
  6. Spread a thin layer of butter over the dough and sprinkle with cinnamon and sugar.
  7. Roll the dough tightly and cut into rolls.
  8. Place the rolls in a greased baking dish and let them rise for 30 minutes.
  9. Bake for 25-30 minutes or until golden brown.
  10. Let cool slightly before serving.
