A delicious and healthy Italian dish featuring chicken, fresh mozzarella, tomatoes, and basil, all gluten-free.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh mozzarella cheese, sliced
  • 2 large tomatoes, sliced
  • 1/4 cup fresh basil leaves
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper.
  3. In a large skillet, heat olive oil over medium heat and sear the chicken breasts until golden brown on both sides.
  4. Transfer the chicken to a baking dish.
  5. Top each chicken breast with slices of mozzarella and tomatoes.
  6. Drizzle balsamic vinegar over the top.
  7. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
  8. Garnish with fresh basil before serving.
