- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine gluten-free flour, powdered sugar, butter, egg, vanilla extract, and cinnamon. Mix until a dough forms.
- Roll out the dough on a floured surface and cut into desired shapes.
- Place the cookies on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until golden brown.
- In another bowl, mix ricotta cheese with chocolate chips and pistachios.
- Once the cookies are cooled, fill them with the ricotta mixture.
- Dust with additional powdered sugar before serving.
