Delicious and crispy gluten-free cannoli cookies filled with a sweet ricotta mixture.

Ingredients

  • 1 cup gluten-free all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 cup ricotta cheese
  • 1/4 cup mini chocolate chips
  • 1/4 cup chopped pistachios (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine gluten-free flour, powdered sugar, butter, egg, vanilla extract, and cinnamon. Mix until a dough forms.
  3. Roll out the dough on a floured surface and cut into desired shapes.
  4. Place the cookies on a baking sheet lined with parchment paper.
  5. Bake for 10-12 minutes or until golden brown.
  6. In another bowl, mix ricotta cheese with chocolate chips and pistachios.
  7. Once the cookies are cooled, fill them with the ricotta mixture.
  8. Dust with additional powdered sugar before serving.
