A refreshing and healthy salad inspired by the flavors of a California roll, perfect for a gluten-free diet.

Ingredients

  • 2 large cucumbers
  • 1 avocado, diced
  • 1 cup imitation crab meat, shredded
  • 1/4 cup rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce (gluten-free)
  • 1 tablespoon sesame seeds
  • Salt to taste

Instructions

  1. Wash and peel the cucumbers, then slice them thinly.
  2. In a large bowl, combine the sliced cucumbers, diced avocado, and shredded imitation crab meat.
  3. In a separate bowl, whisk together the rice vinegar, sesame oil, soy sauce, and salt.
  4. Pour the dressing over the cucumber mixture and toss gently to combine.
  5. Sprinkle sesame seeds on top before serving.
