Gluten Free Butter Cookies

Delightful gluten-free butter cookies that are rich and sweet, perfect for any occasion.

Ingredients

  • 1 1/2 cups all purpose gluten free flour blend
  • 3/4 teaspoon xanthan gum (omit if your blend already contains it)
  • 5/8 cup confectioner’s sugar
  • 1/4 teaspoon kosher salt
  • 8 tablespoons unsalted butter (at room temperature)
  • 3 egg yolks (at room temperature)
  • 1 teaspoon pure vanilla extract
  • Optional for topping: 1 egg white (for brushing), coarse sugar crystals (for sprinkling)

Instructions

  1. Preheat your oven to 350°F. Set out large, clean rimmed baking sheets; line those for icebox cookies with parchment paper.
  2. In a food processor, combine flour, xanthan gum, sugar, salt, butter, egg yolks, and vanilla. Process until a smooth dough forms.
  3. If making spritz cookies, use a cookie press; for icebox cookies, roll the dough and slice it after chilling for 30 minutes.

Notes

Ensure ingredients are at room temperature for best results. Avoid skipping xanthan gum if your flour blend does not have it.
