Deliciously chewy and fudgy gluten-free brookies that combine the best of brownies and cookies.

Ingredients

  • 1 cup gluten-free all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1 cup cookie dough (gluten-free)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a bowl, whisk together the gluten-free flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix the melted butter, brown sugar, and granulated sugar until smooth.
  4. Add the eggs and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and stir until combined.
  6. Fold in the chocolate chips.
  7. Spread the brownie batter evenly in the prepared pan.
  8. Drop spoonfuls of gluten-free cookie dough on top of the brownie batter.
  9. Bake for 25-30 minutes or until a toothpick comes out clean.
  10. Let cool before cutting into squares.

Notes

  • Ensure all ingredients are certified gluten-free.
  • Store leftovers in an airtight container for up to 3 days.
  • For a richer flavor, add nuts or additional chocolate chips.
