Delicious and healthy gluten-free broccoli cheese balls that are perfect for a snack or appetizer.

Ingredients

  • 2 cups broccoli florets, steamed and chopped
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup gluten-free breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil for frying

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the steamed broccoli, shredded cheese, gluten-free breadcrumbs, Parmesan cheese, eggs, garlic powder, salt, and pepper.
  3. Mix until well combined.
  4. Form the mixture into small balls and place them on a baking sheet.
  5. Drizzle with olive oil.
  6. Bake for 20-25 minutes or until golden brown.
  7. Serve warm and enjoy!

Notes

  • For a spicier kick, add red pepper flakes to the mixture.
  • These can be made ahead of time and frozen before baking.
