A delicious and healthy recipe for braised collard greens, perfect for spring.

Ingredients

  • 1 bunch collard greens, washed and chopped
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and sauté until translucent.
  3. Stir in minced garlic and cook for another minute.
  4. Add the chopped collard greens and stir to combine.
  5. Pour in the vegetable broth and bring to a simmer.
  6. Cover and cook for about 30 minutes, or until greens are tender.
  7. Stir in apple cider vinegar and season with salt and pepper.
  8. Serve warm as a side dish.
