Deliciously sweet and chewy blondies packed with blueberries and white chocolate, perfect for a gluten-free dessert.

Ingredients

  • 1 cup gluten-free all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a large bowl, mix together the melted butter, brown sugar, and granulated sugar until well combined.
  3. Add the eggs and vanilla extract, mixing until smooth.
  4. In a separate bowl, whisk together the gluten-free flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fold in the blueberries and white chocolate chips gently.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool before cutting into squares.
