  • 1 cup gluten-free oats
  • 1 cup fresh blueberries
  • 1/2 cup almond milk
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cottage cheese, oats, almond milk, honey, eggs, vanilla extract, baking powder, cinnamon, and salt.
  3. Gently fold in the blueberries.
  4. Pour the mixture into a greased baking dish.
  5. Bake for 30-35 minutes or until the top is golden and set.
  6. Let it cool for a few minutes before serving.
