A delicious and healthy breakfast option that combines the sweetness of blueberries with the convenience of a quesadilla, all while being gluten-free.

Ingredients

  • 2 gluten-free tortillas
  • 1 cup fresh blueberries
  • 1/2 cup cream cheese, softened
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions

  1. In a bowl, mix the softened cream cheese, honey, and vanilla extract until smooth.
  2. Spread the cream cheese mixture evenly over one side of each tortilla.
  3. Sprinkle fresh blueberries over the cream cheese on one tortilla.
  4. Top with the other tortilla, cream cheese side down.
  5. Heat a skillet over medium heat and add a little butter or oil.
  6. Cook the quesadilla for about 3-4 minutes on each side, or until golden brown and crispy.
  7. Remove from the skillet, slice into wedges, and serve warm.

Notes

  • Feel free to add other fruits or nuts for extra flavor and texture.
  • Can be served with maple syrup or yogurt on the side.
