Delicious and healthy sweet potatoes stuffed with BBQ chicken, perfect for a gluten-free meal.

Ingredients

  • 4 medium sweet potatoes
  • 2 cups cooked shredded chicken
  • 1 cup gluten-free BBQ sauce
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork, then place them on a baking sheet.
  3. Bake the sweet potatoes for 45-60 minutes, or until tender.
  4. In a bowl, mix the shredded chicken with the gluten-free BBQ sauce.
  5. Once the sweet potatoes are cooked, cut them in half lengthwise and scoop out a bit of the flesh.
  6. Mix the scooped sweet potato flesh with the BBQ chicken mixture.
  7. Stuff the sweet potato halves with the BBQ chicken mixture.
  8. If desired, top with shredded cheese and return to the oven for an additional 5-10 minutes.
  9. Garnish with chopped green onions before serving.

  • Can substitute chicken with shredded pork or beef.
  • For a vegan option, use shredded jackfruit instead of chicken.
