- 4 medium sweet potatoes
- 2 cups cooked shredded chicken
- 1 cup gluten-free BBQ sauce
- 1/2 cup shredded cheese (optional)
- 1/4 cup chopped green onions
- Salt and pepper to taste
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork, then place them on a baking sheet.
- Bake the sweet potatoes for 45-60 minutes, or until tender.
- In a bowl, mix the shredded chicken with the gluten-free BBQ sauce.
- Once the sweet potatoes are cooked, cut them in half lengthwise and scoop out a bit of the flesh.
- Mix the scooped sweet potato flesh with the BBQ chicken mixture.
- Stuff the sweet potato halves with the BBQ chicken mixture.
- If desired, top with shredded cheese and return to the oven for an additional 5-10 minutes.
- Garnish with chopped green onions before serving.
