Delicious and fluffy gluten-free banana waffles topped with a rich homemade caramel sauce, perfect for a spring breakfast.

  • 2 ripe bananas
  • 1 cup gluten-free all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup almond milk (or any milk of choice)
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar (for caramel)
  • 1/4 cup heavy cream (for caramel)
  • 1 tablespoon butter (for caramel)

Instructions

  1. In a mixing bowl, mash the ripe bananas until smooth.
  2. Add the gluten-free flour, baking powder, salt, almond milk, melted coconut oil, and vanilla extract to the mashed bananas. Mix until well combined.
  3. Preheat your waffle iron according to the manufacturer’s instructions.
  4. Pour the batter into the preheated waffle iron and cook until golden brown and crispy.
  5. While the waffles are cooking, prepare the caramel sauce by combining brown sugar, heavy cream, and butter in a saucepan over medium heat. Stir until the sugar dissolves and the mixture thickens.
  6. Once the waffles are done, serve them warm topped with the homemade caramel sauce.
