Gluten Free Banana Cookies

Deliciously soft and easy-to-make gluten free banana cookies that are perfect for any occasion.

Ingredients

  • 2 ripe bananas
  • 1 cup gluten free oats
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the honey or maple syrup and vanilla extract to the mashed bananas and mix well.
  4. In another bowl, combine the gluten free oats, almond flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. If using, fold in the chocolate chips.
  7. Drop spoonfuls of the cookie dough onto a lined baking sheet.
  8. Bake for 10-12 minutes or until the edges are golden brown.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Make sure the oats are certified gluten free.
  • Store cookies in an airtight container for up to a week.
  • These cookies can be frozen for longer storage.
