- 2 ripe bananas
- 1 cup gluten free oats
- 1/2 cup almond flour
- 1/4 cup honey or maple syrup
- 1/2 teaspoon baking soda
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, mash the ripe bananas until smooth.
- Add the honey or maple syrup and vanilla extract to the mashed bananas and mix well.
- In another bowl, combine the gluten free oats, almond flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- If using, fold in the chocolate chips.
- Drop spoonfuls of the cookie dough onto a lined baking sheet.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
