Delicious and healthy gluten-free cookies made with ripe bananas.

Ingredients

  • 2 ripe bananas
  • 1 cup gluten-free oats
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the gluten-free oats, almond flour, honey or maple syrup, baking soda, vanilla extract, and salt to the mashed bananas. Mix until well combined.
  4. If using, fold in the chocolate chips.
  5. Drop spoonfuls of the cookie dough onto a lined baking sheet.
  6. Bake for 10-12 minutes or until the edges are golden brown.
  7. Allow to cool before serving.

Notes

  • Store cookies in an airtight container for up to a week.
  • For a nut-free version, substitute almond flour with coconut flour.
  • Feel free to add nuts or dried fruits for extra flavor.
