- 2 ripe bananas
- 1 cup gluten-free oats
- 1/2 cup almond flour
- 1/4 cup honey or maple syrup
- 1/2 teaspoon baking soda
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, mash the ripe bananas until smooth.
- Add the gluten-free oats, almond flour, honey or maple syrup, baking soda, vanilla extract, and salt to the mashed bananas. Mix until well combined.
- If using, fold in the chocolate chips.
- Drop spoonfuls of the cookie dough onto a lined baking sheet.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow to cool before serving.
Notes
- Store cookies in an airtight container for up to a week.
- For a nut-free version, substitute almond flour with coconut flour.
- Feel free to add nuts or dried fruits for extra flavor.
