Delicious and moist gluten-free banana bread blondies, perfect for springtime treats.

Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup almond flour
  • 1/2 cup gluten-free all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup melted coconut oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mix the mashed bananas with brown sugar and melted coconut oil until well combined.
  3. Add the eggs and vanilla extract, and mix until smooth.
  4. In another bowl, whisk together the almond flour, gluten-free all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. If using, fold in the chocolate chips.
  7. Pour the batter into the prepared baking dish and spread evenly.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool before cutting into squares and serving.
