Gluten-Free Balsamic Chicken Breast with Spinach and Tomatoes

A delicious and healthy gluten-free recipe featuring balsamic chicken breast served with fresh spinach and tomatoes.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup balsamic vinegar
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix balsamic vinegar, olive oil, garlic, salt, and pepper.
  3. Place chicken breasts in a baking dish and pour the balsamic mixture over them.
  4. Bake for 25-30 minutes or until the chicken is cooked through.
  5. In the last 5 minutes of baking, add spinach and cherry tomatoes to the dish.
  6. Remove from the oven and let it rest for a few minutes before serving.
