Ingredients

Scale
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup gluten-free flour
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, salt, and pepper. Pulse until a coarse mixture forms.
  3. Add gluten-free flour and pulse until combined.
  4. Form the mixture into small balls or patties and place them on a baking sheet lined with parchment paper.
  5. Drizzle olive oil over the falafel.
  6. Bake for 25-30 minutes, flipping halfway through, until golden brown.
  7. While the falafel is baking, prepare the tahini sauce by mixing tahini, lemon juice, garlic, and water until smooth.
  8. Serve the baked falafel warm with tahini sauce drizzled on top.

Notes

  • For extra flavor, add spices like paprika or cayenne pepper to the falafel mixture.
