A delicious and easy recipe for authentic Greek potatoes that are gluten-free and packed with flavor.

Ingredients

  • 4 large potatoes, peeled and cut into wedges
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup vegetable broth

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  3. Add the potato wedges to the bowl and toss until they are well coated with the mixture.
  4. Place the seasoned potato wedges in a single layer on a baking sheet.
  5. Pour the vegetable broth over the potatoes.
  6. Bake in the preheated oven for 45-50 minutes, or until the potatoes are golden brown and tender, flipping halfway through.
