- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
- Add the potato wedges to the bowl and toss until they are well coated with the mixture.
- Place the seasoned potato wedges in a single layer on a baking sheet.
- Pour the vegetable broth over the potatoes.
- Bake in the preheated oven for 45-50 minutes, or until the potatoes are golden brown and tender, flipping halfway through.
- Serve hot as a side dish or main course.
