A refreshing and crunchy salad that is perfect for a light meal or as a side dish, featuring cucumbers and a tangy Asian dressing.

Ingredients

  • 2 large cucumbers
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce (gluten-free)
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated ginger
  • 1/4 teaspoon red pepper flakes
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Wash and slice the cucumbers thinly.
  2. In a bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, grated ginger, and red pepper flakes.
  3. Add the sliced cucumbers to the dressing and toss to coat.
  4. Let the salad marinate for at least 15 minutes in the refrigerator.
  5. Before serving, sprinkle with sliced green onions and sesame seeds.
