Deliciously sweet and easy to make gluten-free apple pie blondies that combine the flavors of apple pie with the chewy texture of blondies.

  • 1/2 cup coconut flour
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup diced apples
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mix together the almond flour, coconut flour, brown sugar, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the eggs, maple syrup, melted coconut oil, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients until well mixed.
  5. Fold in the diced apples and walnuts if using.
  6. Pour the batter into the prepared baking dish and spread evenly.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool before cutting into squares and serving.
