Gluten Free Apple Pie Bars

  • 2 cups gluten-free all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 3 cups apples, peeled and sliced
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the gluten-free flour, butter, brown sugar, granulated sugar, salt, cinnamon, and nutmeg until crumbly.
  3. Press half of the mixture into the bottom of a greased baking dish.
  4. In another bowl, combine the sliced apples, lemon juice, cornstarch, and remaining sugar.
  5. Spread the apple mixture over the crust in the baking dish.
  6. Sprinkle the remaining crumb mixture on top of the apples.
  7. Bake for 30-35 minutes or until the top is golden brown.
  8. Allow to cool before slicing into bars.

Notes

  • Serve warm with a scoop of vanilla ice cream for extra indulgence.
  • Store leftovers in an airtight container in the refrigerator.
