Delicious and fluffy gluten-free cinnamon rolls with an almond croissant twist.

Ingredients

  • 2 cups gluten-free all-purpose flour
  • 1/2 cup almond flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk (dairy or non-dairy)
  • 1 teaspoon vanilla extract
  • 1/2 cup almond paste
  • 1 tablespoon cinnamon
  • 1/4 cup sliced almonds

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the gluten-free flour, almond flour, sugar, baking powder, and salt.
  3. Add the melted butter, milk, and vanilla extract to the dry ingredients and mix until a dough forms.
  4. Roll out the dough on a floured surface into a rectangle.
  5. Spread the almond paste evenly over the dough and sprinkle with cinnamon and sliced almonds.
  6. Roll the dough tightly into a log and slice into rolls.
  7. Place the rolls in a greased baking dish and bake for 25-30 minutes or until golden brown.
  8. Let cool slightly before serving.
