- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, coconut flour, sugar, baking soda, and salt.
- Add softened butter, almond extract, and egg to the dry ingredients and mix until well combined.
- Fold in the chopped maraschino cherries.
- Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until the edges are golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
