Delicious gluten-free cookies infused with almond and cherry flavors, perfect for spring celebrations.

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup sugar
  • 1/4 cup butter, softened
  • 1/4 cup almond extract
  • 1/2 cup maraschino cherries, chopped
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, coconut flour, sugar, baking soda, and salt.
  3. Add softened butter, almond extract, and egg to the dry ingredients and mix until well combined.
  4. Fold in the chopped maraschino cherries.
  5. Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
  6. Bake for 12-15 minutes or until the edges are golden.
  7. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
