  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger

  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese frosting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the egg, molasses, and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll the dough into balls and place them on a baking sheet lined with parchment paper.
  7. Bake for 8-10 minutes or until the edges are firm.
  8. Let the cookies cool completely before frosting.
  9. Spread cream cheese frosting on the bottom of one cookie and sandwich it with another cookie.
