  • 1 teaspoon baking powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 cups milk (or non-dairy alternative)
  • 1/2 cup molasses
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts
  • 1/4 cup brown sugar
  • 1/4 cup melted butter (or coconut oil)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the rolled oats, baking powder, ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the milk, molasses, maple syrup, and vanilla extract.
  4. Combine the wet and dry ingredients, stirring until well mixed.
  5. Pour the mixture into a greased baking dish.
  6. In a separate bowl, mix the chopped walnuts, brown sugar, and melted butter to create the streusel topping.
  7. Sprinkle the walnut streusel over the oatmeal mixture.
  8. Bake for 30-35 minutes, or until the top is golden brown and the oatmeal is set.
  9. Let cool slightly before serving.

Notes

  • For a vegan option, use non-dairy milk and coconut oil.
  • Can be served warm or cold, and is great with yogurt or milk.
