  • 2 cups milk (or non-dairy alternative)
  • 1/4 cup melted coconut oil (or butter)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mix together the rolled oats, baking powder, ginger, cinnamon, nutmeg, salt, and brown sugar.
  3. In another bowl, whisk together the molasses, milk, melted coconut oil, and vanilla extract.
  4. Combine the wet and dry ingredients, stirring until well mixed.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Bake for 25-30 minutes or until the edges are golden brown.
  7. Let cool before cutting into bars and serving.
