Crispy and golden German Potato Pancakes, or Reibekuchen, made with simple ingredients, perfect for gluten-free diets and family gatherings.

Ingredients

  • 1 pound of potatoes
  • 1 small onion
  • Pinch of salt
  • Pinch of pepper (if desired)
  • 3 tablespoons gluten-free flour
  • 1 medium-sized egg
  • Oil for frying

Instructions

  1. Wash the potatoes and onion thoroughly.
  2. Peel the potatoes and onion with a vegetable peeler.
  3. Grate the potatoes and onion using a box grater or a food processor.
  4. Drain excess water from the grated potatoes to avoid sogginess.
  5. Add salt, pepper, flour, and egg to the drained mixture.
  6. Mix well until all ingredients are combined.
  7. Heat oil in a pan over medium heat.
  8. Spoon batter into the hot oil, making small pancakes.
  9. Cook until golden brown on both sides, approximately 3-4 minutes per side.
  10. Drain on paper towels and keep warm in the oven.
