  • 1 tbsp Salt (Kosher recommended)
  • 2 tsps Instant Yeast
  • 1/4 cup Olive Oil (Extra virgin)
  • 1 1/2 cups Warm Water (around 110°F)
  • 4 cloves Garlic (minced)
  • 1 cup Parmesan Cheese
  • 1 tbsp Fresh Herbs (Optional)
  • 1 tbsp Flaky Sea Salt
  • 1/4 cup Fresh Parsley or Herbs (Optional)

Instructions

  1. Combine the gluten-free flour and salt in a mixing bowl, creating a well for the yeast and water.
  2. Dissolve the instant yeast in warm water, allowing it to activate for about 5 minutes.
  3. Pour the yeast mixture into the well of flour and add the olive oil.
  4. Stir until a soft, sticky dough forms, then add the minced garlic, Parmesan cheese, and fresh herbs.
  5. Knead the dough gently on a floured surface until smooth, about 5-7 minutes.
  6. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise for about 1 hour or until doubled in size.
  7. Preheat the oven to 425°F.
  8. Grease a baking sheet or focaccia pan and stretch the risen dough onto the pan, creating dimples with your fingers.
  9. Drizzle with olive oil and sprinkle with flaky sea salt, and additional Parmesan if desired.
  10. Bake for 20-25 minutes until golden brown and crispy.
  11. Remove from the oven and garnish with fresh parsley or herbs before slicing and serving.
