Delightful gluten-free Funfetti Cinnamon Rolls filled with sweet cinnamon sugar and colorful sprinkles, perfect for any celebratory occasion.

  • ½ cup whole milk (room temperature)
  • 2 ¼ teaspoons dry active yeast
  • ¼ cup + 1 tablespoon granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 teaspoon kosher salt
  • 4 cups all-purpose flour (certified gluten-free)
  • 5 tablespoons unsalted butter (room temperature)
  • ½ cup confetti sprinkles
  • ⅓ cup unsalted butter (softened)
  • ⅓ cup granulated sugar
  • ⅓ cup dark brown sugar (packed)
  • 1 tablespoon ground cinnamon
  • Pinch kosher salt
  • 4 oz cream cheese
  • ¼ cup unsalted butter (room temperature)
  • 1 ½ cups powdered sugar
  • Pinch kosher salt
  • Additional confetti sprinkles (to garnish)

Instructions

  1. Sprinkle yeast over warm water and milk, add 1 tablespoon of sugar, stir, and let sit for 5-7 minutes.
  2. Combine yeast mixture, remaining sugar, egg, and egg yolk in a stand mixer.
  3. Whisk salt into flour and add 2 cups into the mixing bowl.
  4. Use a dough hook to mix, adding another 1 cup of flour, then knead while adding softened butter one tablespoon at a time.
  5. Add the remaining cup of flour until smooth dough forms.
  6. Incorporate confetti sprinkles, transfer to a greased bowl, cover, and let rise for 1 hour until doubled.
  7. Punch down the dough, roll it out into a 20×14 inch rectangle, then spread ⅓ cup softened butter over it.
  8. Mix brown sugar, cinnamon, and regular sugar for filling, spread over the dough, and sprinkle with a pinch of salt.
  9. Roll the dough into a log, slice into 12 pieces, and place in a greased baking pan.
  10. Let rise for another 30-45 minutes.
  11. Preheat oven to 350°F, bake rolls for 30-35 minutes until golden.
  12. Beat cream cheese and butter until smooth, add sifted powdered sugar, and frost warm rolls.
  13. Garnish with additional confetti sprinkles if desired.
