Instructions

  1. In a bowl, mix gluten-free graham cracker crumbs, melted coconut oil, and maple syrup until well combined.
  2. Press the mixture into the bottom of a pie dish to form the crust.
  3. In a separate bowl, whisk together coconut cream, fresh lime juice, lime zest, agave syrup, and vanilla extract until smooth.
  4. Pour the lime filling over the crust and spread evenly.
  5. Freeze the pie for at least 4 hours or until firm.
  6. Before serving, let it sit at room temperature for a few minutes to soften slightly.
  7. Slice and enjoy your refreshing dessert!
